Apple Flaxseed Pancakes


Yield 4-5 Pancakes (1 serving)

Ingredients:

1 Egg

1 Egg White (3tbsp liquid egg whites)

1 tbsp. Ground Flaxseed

1/4 c. Ground Oats 

1/2 tsp. Cinnamon

1 tsp. Vanilla 

1/8 tsp. Salt 

1/2 Medium Apple, Finely Chopped or Grated

 

Directions:

1) Whisk egg and egg whites together until blended. 

2) Add ground flaxseed, ground oats, cinnamon, vanilla, and salt. Mix thoroughly. 

3) Fold in chopped/grated apple. 

**Note: Pancake batter will be thicker than traditional pancake mix. Mix in water to desired thickness/consistency. 

4) Heat pan over low heat and spray with non-stick cooking spray. Add 1/4 c. mix and cook 2-4 minutes per side until golden brown. 

5) Top with a sprinkle of cinnamon and sugar-free maple syrup. Enjoy!
